The bone structure of the shoulder ham is different from the hind-leg ham. It can be distinguished by the shoulder blade that covers a large part of the piece.
Not all Iberian hams are the same, the best pigs are free to graze on acorns on pasture lands and eat up to a ton of acorns to gain about 100Kg.
We would recommend cutting the slices of ham extremely thin and length-wise, always starting at the hoof.
