What is cooked sausage?

Cooked sausage is a type of sausage that is made from minced or chopped meats, mixed with condiments and other ingredients, and which is subsequently subjected to a cooking process at controlled temperatures. This cooking ensures that the product is fully cooked before its packaging or commercialization, which makes it suitable for direct consumption without additional cooking.

How is the cooked sausage preserved?

The cooked sausage must be kept in adequate conditions to maintain its flavor, freshness and nutritional properties. The ideal is to store it in the refrigerator, at a temperature between 0 'C and 5 'C, preferably wrapped in film paper or in an airtight container to avoid the loss of moisture and the absorption of odours.

What is the difference between cooked and cured sausage? 

The cooked sausage is made from meat that is cooked at controlled temperatures, guaranteeing its total cooking before being packaged or marketed. Common example of cooked sausage is cooked ham. This type of sausage requires constant cooling and usually has a shorter shelf life. On the other hand, cured sausage is not cooked, but undergoes a natural or assisted healing process, which may include salting, drying and maturation for weeks or months. This process allows the sausage to be preserved for longer in a natural way and develops more intense and characteristic flavors. Examples of cured sausages are Serrano ham, salchichon or chorizo. 

Are cooked sausages containing lactose or gluten?

Are there sausages that, in their preparation, add products that come from wheat or milk proteins. Our sausages do not have glutens in any case and most are also dairy free.
